Smooth Cauliflower Mash

  • Raw cauliflower
  • Any combination of butter, milk, cream, or whatever you use when you make mashed potatoes - about 1/4 cup
  • Salt and pepper


Break the cauliflower up into florets, or just chop. Bring a large pot of salted water to a boil. Add cauliflower and cook until very tender, about 10 minutes. Drain well and transfer cauliflower to a food processor. Add milk, butter or cream, 1 tablespoon at a time, and purée until smooth. Season with salt and pepper and serve.
