Ham and Cheese Breakfast Tortilla

  • 6 eggs
  • 40 ml milk
  • 2 slices cooked ham, diced
  • 1 onion, minced
  • salt and pepper to taste
  • 1 cup Low Fat cheese, shredded
  • 2 (10 inch) flour tortillas
  • 60 ml salsa


Beat together eggs and milk. Stir in onion, ham, salt and pepper. Heat a non-stick pan over medium high heat and cook egg mixture, stirring occasionally, until firm. Spoon half of the egg mixture on top of each tortilla, sprinkle with cheese, fold over the tortilla to make a roll and top with salsa if desired.
