Sugar snap peas with mint

Mint goes so well with these peas! Very flavorful, great and quick.

  • 2 teaspoons olive oil

  • 350g sugar snap peas, trimmed

  • 3 green onions, chopped

  • 1 clove garlic, chopped

  • 1/8 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 tablespoon chopped fresh mint

 

Heat oil in a large skillet over medium heat. Add the sugar snap peas, green onion, and garlic. Season with salt and pepper. Stir-fry for 4 minutes, then remove from heat and stir in the mint leaves.
