- 1 chopped onion
- 1 whole lettuce shredded
- 2 sticks of celery shredded
- 1 large clove garlic chopped
- 10 cups water
- 1 chicken stock cube
- 5 tbs vegetable stock
- 2 tsps salt
- 1 or 2 tsps curry powder (to taste)
- 50g butter or 2tbs oil
- 2 grated carrots
- 1 large potato grated
- 1kilo frozen peas
- 1 cup fresh cream
Sauté onion, lettuce, celery and garlic in butter. Add curry, potato, peas, water and seasoning (stock)
Simmer for 2 hours. Liquidize. Return to stove and add cream. Adjust seasoning to taste. Serve with croutons. (Optional)
